Cassia’s conference was the reason we ended up in Toulouse. It brought us to a city that seems to live in two worlds—a center of modern aviation whose oldest streets, riverside views, and café tables invite you to slow down.
Our week offered a little of both. Aviation was a natural place to begin. At Aeroscopia, historic aircraft tell the story of how flight evolved—and why Toulouse became so important to it. Back on land, we explored the streets around the Capitole—the grand civic heart of Toulouse. The squares, shops, markets, and tucked-away corners made wandering as memorable as any scheduled stop.

A city best explored slowly
And then there was the food: local markets, relaxed meals, regional flavors, and the kind of simple dishes that stay with you long after a trip ends. Toulouse gave us plenty to see, but the unhurried moments between destinations are what brought the week together.
It was aviation that first drew our attention to Toulouse. It was the river, the streets, and the food that made the city feel like more than a stop on the map.
